I think the first step is to decide what makes a Chocobo cute. In general, round things with big eyes are really cute, but if its eyes are too big, it throws its entire appearance out of balance. Also, it has to be really soft.
I don't know how to describe it, but its presence needs a quality of cuteness, too. You have to feel like you have to protect it and its innocence, even if the Chocobo is really smart. The nicer it is, the easier it is to look cute.

In that case maybe find the one with the softest feathers, or who has the brightest chirp. The option to simply take as many as possible is also there, they are still small.
That's a tough question. Most of them are cute and they know it, even if they're a more grumpy sort. I guess it depends on what you think is important: size, plumage, color, fluffiness.
I think all of those help, but a lot of times it comes down to how they act. An angry bird, no matter how cute it looks, simply isn't as cute if it's trying to peck or bite or kick you.

Squinty in what way? If it makes it look angry, the chocobo has to have a sweet personality to make up for it. It's a special kind of cute.
